Nowadays fruit carts are filled with so many exotic berries and fruits. I wanted to Celebrate my niece‘s 10 th result and thought of using natural fresh fruit to prepare some dessert and made this. This is a delicious, melt-in the-mouth fig mud pie with a silky butterscotch sauce.
Ingredients:
Fresh figs – 250 gms.
Water – ¾ cup
Butter – 100 gms (at room temperature)
Light brown organic sugar – 2/3 cup
Maida – 1 ½ cups
Baking powder – 1tsp
Baking soda – ½ tsp
Vanilla essence- 1 tsp
Milk – 1/3 cup
For Butterscotch sauce: Butterscotch chips – ½ cup and milk – ¼ cup
Method:
-Wash and chop fresh figs into pieces.
-Boil water, switch off the gas. Put chopped fig into hot water and keep it covered for 10 minutes.
-Mix Maida, baking soda and powder and keep aside.
-Pre heat oven at 180 C.
– Line your baking dish with butter paper and keep it ready.
– Now take one glass bowl, beat butter and sugar, add vanilla and beat until smooth.
-Add soaked fig mixture and beat.
-Now fold in Maida and milk alternatively and make homogenous mixture.
-Pour this mixture into lined baking tray and bake in a pre-heated oven for 40 to 45 minutes or until centre of the pudding cooks. If you insert a knife to check, it should come out clean.
-When it is done, remove from the oven and cool
Meanwhile prepare butterscotch sauce. Take one saucepan, put in butterscotch chips and milk, and while boiling mix vigorously, ( If u don’t stir it while boiling, the sauce will become clumpy) until you get smooth saucy texture. Switch off the gas and reserve this sauce until you serve.
When pudding is a little cool, remove from the baking tray ,cut .If it is cool, warm this in the microwave, and pour hot sauce and serve.
This pudding tastes really yummy when it is hot.
