Millet and spinach khichdi

Millets are tiny cereals, which are low in carbohydrate and a very good source of protein, fibre and vitamins. Millet and spinach khichdi is a very tasty, easy to make and healthy khichdi which makes a very light meal.

Ingredients:
Saame rice /Foxtail millet (you can use rice as well) – 1 cup
Moong dal -½ Cup
spinach –1 bunch
Cumin seeds – 1tsp
ginger (grated) -1 “
Salt to taste
Ghee -1 to 2 tbsp.
water – 4 to 6 cups green chilli – 1 or 2 (slit)

 

Method:
-Soak moong dal and millet rice after washing, for 10 to 15 minutes.
-Wash and grind spinach into puree.
-Heat ½ tbsp. ghee in a pressure cooker.
-Add Cumin seeds, green chillies and ginger and fry for a minute.
-Now add water, salt and bring to boil, now add soaked dal and rice with spinach puree. Check for salt and cook till 3 to 4 whistles.
-After the pressure releases, open the lid and pour in the remaining amount of ghee.

Your Khichdi is ready! Enjoy with any crispy side dishes or raita. I usually serve with tava fry or tandoori Gobi.
